- Inca Burger
The quinoa, a grain cultivated for thousands of years in the Andean region, which is recognized as a "super food" because it is rich of protein, essential amino acids and iron, is the main ingredient of this tasty and nutritious burger. Serves: About 4 big units Difficulty: Intermediate Time: 1 hour Ingredients 1/2 cup quinoa grain 2 cups water for cooking the quinoa 1 chopped red onion 1 small bunch of chopped chives 1 c.s. sunflower oil 1 chopped tomatoes 1 teaspoon salt (or more if necessary) 1/4 cup whole wheat flour Directions Cook the quinoa with 2 cups of water until the water dry and it gets soft. In another pan, saute the onion in oil. When it is soft, add the chives and tomatoes and cook for about 5 minutes. Turn off the fire and mix all the ingredients. Add more salt and flour if necessary. Shape the hamburgers. Bake in moderate temperature for about 20 minutes or more. Ayurveda It pacifies the three doshas. Suggested combinations: - Kapha: eat in small quantities with vegetables with hot spices - Pitta: eat with fresh salads - Vata: add a sauce or serve with mashed vegetables.

Rendimento: aproximadamente 4 unidades grande Dificuldade: Médio Tempo: 1 hora Ingredientes 1/2 xícara de quinoa em grão 2 xícaras de água para o cozimento 1 cebola roxa picada 1 maço pequeno de cebolinha picadas 1 c.s. de óleo de girassol 1 tomate picado 1 c.c. sal (ou o quanto bastar) 1/4 xícara de farinha de trigo integral Modo de Preparo Cozinhe a quinoa com as 2 xícara de água até a água secar e ela ficar molinha. Em outra panela, refogue no óleo a cebola. Quando ela estiver macia, acrescente a cebolinha e o tomate e cozinhe por uns 5 minutos. Com o fogo desligado, misture a quinoa cozida ao refogado. Acrescente o sal e a farinha em quantidade suficiente para a massa dar liga. Molde o hamburguers e asse em forno médio por aproximadamente 20 minutos, ou até dourarem. From a majestic tree which is popularly called the "queen of the forest", it grows up to 50 meters tall and lives up to 1000 years. It is native from Amazon region, from Guianas, Venezuela, Brazil, eastern Colombia, eastern Peru and eastern Bolivia. Has an important function in the diet of indigenous peoples since ancient times and still today serves as a source of nutrition to the tribes. It is an extremely nutritious, rich in protein (5 times more than cow's milk), in fat, selenium, calcium and phosphorus. For containing large amounts of selenium, increases immune resistance, is effective for thyroid gland regulation and for prevention of cancer and, with its antioxidant function, fights free radicals. But it should be consumed in moderation, preferably one unit per day. It is indicated for anemic persons, children, elderly, pregnant and lactating women. Ayurveda As it is a difficult to digest food, consume it in the form of milk and with spices increses it digestibility. Proveniente da castanheira-do-Pará (bertholletia excelsa), árvore tão magestosa que é chamada popularmente de "rainha das florestas", por chegar a 50 metros de altura e viver até 1000 anos. É nativa da região amazônica, das Guianas, Venezuela, Brasil, leste da Colômbia, leste do Peru e leste da Bolívia. Exerce papel importante na alimentação dos povos indígenas desde tempos remotos e ainda hoje serve de fonte de nutrição às tribos. É um alimento extremamente nutritivo, rico em proteínas (com 5 vezes mais que o leite de vaca), em gorduras, selênio, cálcio e fósforo. Eu, como humana, errante que sou, por vezes fui à cozinha e o que fiz não agradou. Senti-me mal, pois não gosto de errar. É que aprendi deste cedo que tudo que fizer perfeito tem que ficar. Mas vi, não preciso me lastimar. Tão importante quanto cozinhar algo gostoso, é aprender que cozinha é lugar em que, com carinho e respeito podemos aprender a brincar.

Exactly eight years ago I was naturally led to take the most transformative attitude of my life: to become a vegetarian. This change occured from the reflection about the impact that the food I eat causes inside and outside of me. Until that I had never questioned me about it. What made me take this decision in the first moment was thinking and feeling the pain that a meat based eating causes to animals. And in how to eat them was like eating my own family, because it was that way I started to feel. Time passed and I realized that about my eating choice, it was not enough to consider only the question of animal suffering. My food should also take into consideration my own well-being. Therefore, it should be healthy. At this time, I began to say goodbye to canned, refined, artificially spiced and sugary food. At the same time, I started the search for food that could bring me health and ethics: whole, fresh, nutritious, organic, vegetarian ... And do you know where I best found the final product that met my new lifestyle? In my kitchen. Cooking. It was time to roll up my sleeves, tying my hair, puting the apron and starting the work! And I felt like being carried to this place that aroused my creative, mathematical and scientific sides. While that stimulated my senses of taste, smell, touch, hearing and vision. What a magical place that is the kitchen! And what a delight it is to eat something prepared by ourselves, just the way we like! Continuing my discovery road, I came across feeding styles that promisses and that actually make very well to many people. But unfortunately, not me. I discovered with the ancient science of Ayurveda that even being very healthy, each living being is unique, and what's good for some people, maybe it's bad for other ones. But some rules are basics to everyone: that the more natural, fresh and aware, and less processed and industrialized food is, the healthier it would be. In those eight years, the concept of "ideal food" has changed numerous times for me. What has not changed was the desire to know and apply the most appropriate way to eat, taking into account health, balance and well-being of body, environment and beings that surround us. Há exatamente 8 anos, naturalmente fui conduzida a tomar a atitude mais transformadora da minha vida: me tornar vegetariana. Essa mudança se deu a partir da reflexão do impacto que o alimento que ingiro causa dentro e fora de mim. Até então eu nunca tinha me questionado a respeito. O que me fez tomar essa decisão, em primeiro momento, foi pensar e sentir o sofrimento que uma alimentação a base com carne causa aos animais. E em como comê-los seria como comer à minha própria família, pois assim os sentia. Passou o tempo e percebi que não adiantava me alimentar considerando somente a questão do sofrimento animal. A minha alimentação também deveria levar em consideração o meu próprio bem estar. Portanto, deveria ser saudável. Neste momento, comecei a me despedir de enlatados, refinados, condimentados e açucarados. Ao mesmo tempo, iniciou-se a busca pela alimentação que agregasse saúde e ética: integrais, frescos, nutritivos, orgânicos, vegetarianos... E sabe onde melhor encontrei o produto final que se enquadrasse ao meu novo estilo de vida? Na minha cozinha. Cozinhando. Chegou a hora arregaçar as mangas, amarrar o cabelo, colocar o avental e mãos à obra! Fui então sendo arrebatada por este local que despertava os meus lados criativo, matemático e científico. Ao mesmo tempo em que estimulava os meus sentidos: o paladar, hummmm; o olfato, com os aromas que exalavam da panela; o tato, ao manusear a massa de pão; a audição, para saber o momento exato de desligar a panela; e a visão, para montar pratos de se comer com os olhos. Que lugar mágico que é a cozinha! E que delícia que é comer o que se prepara, do jeitinho que a gente gosta! Continuando a minha estrada de descobertas, me deparei com estilos de alimentação que prometiam e que de fato faziam muito bem à muita gente. Mas, infelizmente, não a mim. Descobri, através da ciência milenar do Ayurveda que, mesmo o alimento sendo saudável, cada ser é único, e o que faz bem o para uns, pode fazer mal para outros. Mas que algumas coisas são básicas para todos: que quanto mais natural, fresca e consciente, e menos processada e industrializada for a alimentação, mais saudável será. Nesses 8 anos, o conceito "alimentação ideal" mudou inúmeras vezes. O que não mudou foi o desejo de conhecer e aplicar a maneira mais adequada de me alimentar, levando em consideração a saúde, o equilibrio e o bem-estar do nosso corpo, do meio ambiente e dos seres que nos cercam.
