Vegan Mosaic Gelatin
In Brazil the Children's Day is celebrated in October 12th. And this recipe was made specially for this date. My grandmother used to make this dessert when I was a child and I always loved it. So I decided to veganize her recipe and to make it healthier.
Vegan Mosaic Gelatin Recipe
Yield: 4 servings Difficulty: medium Time: 30 minutes (preparation) + 3 hours in the refrigerator
Ingredients for the Yellow Gelatin
1/2 cup of natural passion fruit juice A pinch of tumeric Sugar to taste 1/2 teaspoon agar-agar
Ingredients for Red Gelatin
1/2 cup of hibiscus tea Sugar to taste 1/2 teaspoon agar-agar
Ingredients for Green Gelatin
1/4 cup concentrate mint juice Sugar to taste 1/4 cup water 1/2 teaspoon agar-agar
White Gelatin Ingredients
1 cup of homemade coconut milk Sugar to taste 1/2 teaspoon agar-agar
Directions for Yellow Gelatin
Place the passion fruit juice, the sugar, the tumeric and the agar in a pan and cook over low heat for 3 minutes counting from the beginning of the boil, stirring constantly;
Place in a small square or rectangular bowl in which the liquid gets the height of at least 1 cm and put in the refrigerator.
Directions for Red Gelatin
Place hisbiscus tea, the sugar and the agar in a pan and cook over low heat and repeat the yellow gelatin procedure.
Directions for Green Gelatin
Place water, the sugar and the agar in a pan and cook over low heat and repeat the other gelatins procedure. Mix with mint juice and take to the refrigerator.
Directions for White Gelatin
Before starting the white gelatin, ensure the other ones are firm enough to be cut into cubes and put into a bowl.
Place the coconut milk, the sugar and the agar in a pan over low heat and cook for 3 minutes;
Gently mix the gelatin cubes and add the liquid white gelatin. Take to the refrigerator for a few hours, until firm. It's ready!
