Vegan Kibbeh Stuffed with Pumpkin Hummus Recipe

Yield: 14 small units Easy Time: 2 hours


1 pumpkin hummus recipe (firm consistence) 1 cup cracked wheat (special for kibbeh) 4 cup boiling water 1/2 small onion, chopped 1 tablespoon olive oil 1/2 teaspoon syrian pepper 1/4 cup chopped fresh mint 1 teaspoon salt tea Cassava flour (if necessary)


  1. Soak the wheat in boiling water for about 20 minutes;

  2. Before cool, drain it, squeezing with a spoon to remove all the water;

  3. Place in a pot and knead with your hands with the wheat still warm;

  4. Saute onion in olive oil and add it to the wheat with the other ingredients. If you have time, let it cool in the refrigerator. Add cassava flour gradually, if necessary;

  5. Make the kibbehs and add the hummus filling;

  6. Bake them at 180° C for about 35 minutes. It is ready!
