Vegan Almond and Sunflower Chocolate Milk


Last Sunday we were honored to participate in the first vegetarian and vegan fair in Brazil organized by a municipal government, the Limeira Veg. And it was in the city I live! And do you guess how many people were present? 8.000!

It was amazing! There were people from various cities. Vegetarian, vegan, celiac, lactose intolerant and people without any limitation in the diet, but with curiosity about a different food.

Our tent was very requested. Everything it was prepared, we sell. And people enjoyed a lot Vita Nutrire food. One of the dishes served has the recipe on the blog, which is the Dried Fruits Candies.

We were very happy with the opportunity to provide a conscient food to others, outside virtual environment. In addition to foods, we also made a workshop of non dairy milks. And the recipe below was the one we teached.

VIta Nutrire tent in Limeira Veg

Almond and Sunflower Chocolate Milk Recipe Vegan, lactose free and gluten free.

Serves: 2 cups

Difficulty: easy

Time: 4 to 8 hours to soak + 5 minutes to prepare

Ingredients

1/4 cup raw almonds

1/4 cup raw sunflower seeds

Water to soak

2 cups water to prepare

4 tbsp cane syrup

3 tsp cocoa powder

1 tsp natural vanilla extract (optional)

1 pinch of cinnamon (optional)

Directions

  1. Soak the nuts for about 4 to 8 hours;

  2. Discard the water from the sauce and blend them with 2 cups of water;

  3. Strain the milk into a cloth or a fine sieve - save the residue;

  4. Wash quickly the blender cup and put back the milk in it;

  5. Add the cane syrup, the cocoa, the vanilla and the cinnamon. Blend again. It's ready!

Tips

  1. To increase digestibility and to prevent toxin formation, mainly in cold weather, prefer to drink it warm and adding spices like cinnamon, ginger, anise, cloves, cardamom and etc;

  2. The milk residue can be used to prepare cakes, pies and breads. But I like very much to make savory forofas with it, using half part of nuts residue and half part of manioc flour - try this for the Festive Zucchini Farofa recipe. It is necessary to dry the residue before using a pan or in the oven, with low temperature. You can store it outside the fridge.

  3. This milk can be stored in the fridge for 3 days.

  • Increases Kapha Dosha;

  • Decreases Pitta Dosha;

  • Decreases Vata Dosha.
