Pumpkin Hummus
Hummus is a chickpea dish. In this version, I added pumpkin. And the result could not be better.
Pumpkin Hummus Recipe
Yield: 4 servings Easy Time: 50 minutes
Ingredients
1 cup cooked chickpea 2 cups baked pumpkin (in cubes) 1 tablespoon tahini 2 tablespoons olive oil 3 baked garlic cloves 1 teaspoon salt tea Juice of 1 lemon 1/8 teaspoon spicy paprika (optional) Water (if necessary)
Directions
Soak chickpea for 8 to 10 hours. For this recipe, you will need about 60g of raw chickpea. I like to prepare 500g and freeze the leftovers, which yields a 9 cups. After 8 hours, drain and cook in a pressure cooker with one part of chickpea to one part water. Cook over high heat until it begins to sizzle. Lower the heat and simmer for 15 minutes, turn it off and let the pressure out naturally, which takes about 20 minutes. The cooking water is aquafaba and you can freeze it to use later;
Bake the pumpkin with the garlic until them to get soft. I cooked half pumpkin cutted in 8 slices for about 20 minutes each side over 220ºC and I peeled after baked;
Blend all ingredients adding water if necessary until it get nice and smoothie. I used 1 tablespoon of water.
Adjust the seasonings according to your taste (salt, lemon, tahini, garlic). It is ready!
Tips
If cooking only 60g chickpeas, reduce cooking time to about 10 minutes;
You can choose the pumpkin you like most. I like to use kabocha;
Because I don't like raw garlic, I decided to bake with pumpkin. But if you like, you can skip this step;
I baked the pumpkin to make it drier and more intense flavor. But you can cook in the steam or water;
The pumpkin seeds you can roast and eat, or dry in the sun and plant.
Crispbread Recipe
I made half of this chapati recipe, but instead of being made in the pan, I cut each raw disk of dough into 8 pieces and took it to bake in oven at 180 ° C for about 30 minutes, turning off the heat and leave to rest in the oven until cool. It got very good!
You can also roast in oven at 180ºC the pita bread.
