Brown Cateto Rice

Serves: 6 small portions
Difficulty: Easy
Time: 8 hours for soaking + 30 minutes for cooking

 

Ingredients

 

1 cup of brown cateto rice
Filtered water for soaking
3 cups of water for cooking
1 small onion, chopped or 1 tsp grated fresh ginger
Olive oil or another oil
Salt

 

Directions

 

  1. Soak the rice for about 8 hours in filtered water. This process helps to neutralize the phytic acid or phytate present in the grain, which is an anti-nutritional factor.

  2. Sauté the onion or the ginger in olive oil.

  3. Add the cooking water.

  4. Drain the rice and add it.

  5. Add salt.

  6. Put in minimal fire (almost off) and cook until the water dry. Before turning off the fire, check is the rice is soft. If not, add more water and continue cooking.
