When I was a child I didn't enjoy zucchini. And my mother was always told me: "One day you will like it, trust me." And I thought it was impossible.
Someday I learned how to cook and also how to prepare zucchini the way I like. And I started to love it! Now I eat zucchini every week. And in the blog there are several recipes using it, like stuffed zucchini, zucchini pasta, mushroom and zucchini cottage pie, zucchini "farofa" and now this version, baked, which one is very tasty and simple to make.
Baked Zucchini Recipe
Yield: 2-3 servings
Time: 40 minutes
Seasoned salt (or sea salt)
Cut the zucchinis into slices with equal thickness of about half a centimeter;
Place the slices in a large baking dish, put olive oil, salt, pepper and oregano to taste and mix into the baking dish using you hands. The olive oil and the spices should involve each slice;
Arrange the slices side by side and bake them for about 35 minutes at 250°C or until necessary (you don't need to pre-heat the oven). It is ready! And the recipe of vegan mint sauce is here.
