Beet Stalk Veggie Burger

Did you know that about a third of all food produced in the world is wasted? Meanwhile, 800 million people are undernourished. Isn't tragic?

This recipe is an example of how use totally the food and avoid wasting it.

Beet Stalk Veggie Burger Recipe

Yield: 2 to 3 units

Easy

Time: 20 minutes

Ingredients

1 small onion, chopped

1 tablespoon olive oil

1 and 1/2 cup of chopped beet stalk

1 and 1/2 cup water

Salt to taste

Fresh herbs to taste (like parsley, chives, basil)

Raw cassava flour

Directions

  1. Saute onion in oil until soft;

  2. Add the chopped stalk and water and cook until dry;

  3. Add salt, fresh herbs and cassava flour gradually. If necessary, add some water;

  4. Mold in the shape of burger and grill them on both sides with a little olive oil. It is ready!

Tips

  1. Finely chop the stalk as small as possible;

  2. You can put some beet together and also use a food processor to the dough to get more homogeneous.
