Zucchini "Pasta" With Cashew Sauce Recipe

Gluten-free, lactose-free and vegan.

Yield: 2 servings Easy Time: 20 minutes


2 medium zucchini 1 small onion 1 tablespoon olive oil 1/8 teaspoon turmeric (optional) 1/4 cup raw cashew nuts Sea ​​salt to taste Herbs to taste

Method of Preparation

  1. Soak the cashew nuts in warm water;

  2. Wash the zucchinis and cut lengthwise slices from zucchini using a vegetable julienne peeler, stopping when the seeds are reached. Turn zucchini over and continue 'peeling' until all the zucchini is in long strips. Reserve the zucchini core;

  3. Cook the zucchinis core;

  4. Chop the onion and saute it in olive oil. Add turmeric and immediately the zucchini "pasta". Cook over low heat. Put a some water if necessary. Put salt as much you like. Reserve;

  5. To make the sauce, blend the zucchini core with the cashew nuts (without soaking water), adding water if necessary. Add salt and herbs to taste, like basil, oregano and rosemary;

  6. Heat the sauce and it's ready! Garnish with basil or other fresh herb.
