In Brazil condensed milk is present in almost all desserts.
At birthday parties, it is practically the protagonist.
It was created to be a durable food in the period there was not electric refrigerator in homes, made to be diluted before use. But gradually it became a essential ingredient in every "good" dessert - and without diluting.
Many Brazilian traditional recipes have been changing to include this ingredient, such as tapioca couscous, the coconut candy, the paçoca, sweet rice, the hominy and so on.
But is there a problem eating condensed milk without moderation?
More than 50% of its composition is refined sugar, and its consumption is associated to obesity, diabetes and cardiovascular disease.
The World Health Organization strongly recommends that we limit the consumption of sugar in 10% of daily calories, which is equivalent to 50g per day, preferably less than 5% (25g) and the less as possible.
Currently in Brazil each inhabitant consumes 145g sugar per day, or 3 times the maximum recommended by the WHO. No wonder more than 50% of Brazilians are overweight.
Isn't it alarming?
Condensed coconut and biomass milk ? What is the advantage?
There are several advantages:
- In the conventional condensed milk it is the sugar the responsable to provide the creamy texture. But in this condensed milk the green banana biomass has this responsability, which gives us the possibility to put the quantity and quality of sugar we want (less quantity and better quality of sugar, I suggest) with guaranteed creaminess;
- The benefits of biomass are many, as we talked about in this post:
"Because of the great quantity of resistant starch biomass has, the benefits of its consumption are numerous: prebiotic and probiotic action that balances the flora and protects the intestinal health, assists in the absorption of nutrients, protects against colorectal cancer and treats diarrhea and constipation. It also has regulatory action of satiety and of the amount of blood sugar. And to complete, it is rich in vitamin A, B1, B2, potassium, magnesium, manganese, copper, phosphorus, sulfur, chlorine, and iodine."
- About the coconut milk, there are several benefits. Among them, antiviral action, antifungal and antibacterial by lauric acid presence;
- It is vegan and lactose free.
Condensed Coconut and Biomass Milk Recipe
Serves: approximately 300ml
Time: 5 minutes
1 cup of homemade coconut milk (or another nondairy milk)
3/4 cup green banana biomass
Sugar to taste (unrefined preferably as brown sugar, molasses, coconut, demerara ...)
1 pinch of salt
Mix all ingredients and cook over low heat to thicken if necessary. Ready!
The amount of biomass of this recipe may vary according to biomass you use (more or less water in the composition);
I used 4 tablespoons demerara sugar in this recipe. I chose this sugar to give a neutral flavor and a light color to the cream, but I suggest you to prefer using brown sugar, molasses or coconut sugar, if possible.
This is a cold and heavy food to Ayurveda.
