Peanut Cookie


Gluten free and Vegan

Peanut Cookie Recipe

Serves: 12 medium units

Difficulty: Easy

Time: 40 minutes

Ingredients

1 cup roasted, unsalted and peeled peanuts

1/3 cup rolled oats (gluten-free if desired)

1/3 cup brown sugar

1/2 d.c. fennel seeds (optional) *

1 pinch of salt

1 tablespoon sunflower oil (coconut or another one)

2 tablespoon water

Directions

Separetely grind peanuts and oats in a blender to transform them in thick flour.

Mix all the dry ingredients and add the oil and water.

Shaping and baking cookies in greased baking sheet at 170 ° C for about 30 minutes.

When cold, remove the cookies from baking sheet.

* Fennel is optional because not everyone likes the taste, but assists in the cookie digestion.

Ayurveda

This is a very nutritious food, so should be eaten in moderation by people of all doshas.

Vata should consume preferably accompanied by a hot drink as a tea to reduce the drying effect of this recipe.
